i kinda wanna transition to being vegan later in life, but i don't know where to start, and it doesn't help that in kazakhstan vegetarianism and veganism is less popular than in the west. like...there are barely if any vegan grocery stores or cafes that have vegan options other than salads. and i also can't find seitan. (why??? i am closer to china than US is, what the hell??)
also im poor lol
anyway...does anyone have any advice or resources? pls help

I think one of the best home cooking techniques you can learn in general is being comfortable substituting things. I don't mean substituting vegan alternatives to meat, more like using whatever vegetables you have on hand instead of worrying about having everything perfect. Saves some money when you shop on what's in season or on sale. This comes with some experience and experimenting.
